Happy September, friends!! I hope everyone had a great Labor Day weekend and enjoyed the extra day off. I worked over the weekend and had to do some labor on Labor Day- it was actually quite busy at the urgent care. You would think it would be slower since it was an absolutely gorgeous day out and people should be outside enjoying their grilled burgers and pool time. But no, we were nonstop busy the whole time but hey- more patients equals more practice.
Anyways, for today’s trending, I thought I’d do something a little different. What is always trending in my mind? Great food. I am no Rachael Ray or Betty Crocker, but there are a select few dishes that I can successfully whip up in the kitchen. This recipe I’m about to share is one of my absolute favorites, but I won’t take all the credit. My old roommate Whitney showed me how to cook lots of things, and one of my favorites is this summer salad. Even though boots and PSLs are on our mind, it technically is still summer, right?? I thought I would share it with you because it’s just that delicious and incorporates a lot of different flavors. Enjoy!
After marinating your chicken breasts in ranch dressing, cover both sides of the breast with crushed pecans.
Bake chicken at 375 degrees for 20-25 minutes.
Cut up your fresh strawberries and mandarin oranges and add them to your spinach.
Top off your salad with the best part- Brianna’s poppy seed dressing! It’s pretty thick so a little goes a long way, but oh so delicious.
This post wouldn’t be complete without including some of my favorites from the grill. Luckily, two of my best friends live a few blocks away so we frequently get together for “family dinner.” Because great friends are like family and none of our families live in Charlotte… so that’s just what we do! Some of my favorite recent summer meals would have to be corn on the cob, pasta salad, and kabobs.
These kabobs were extra special and were full of veggies, steak, andouille sausage, and bacon. Is your mouth watering yet?? Let me just add that I’m so glad I found a man that can cook 🙂
